Description

White Bean Chicken Soup is a comforting, protein-rich soup made with tender chicken, creamy white beans, vegetables, and herbs in a flavorful broth.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 (15 oz) cans white beans, drained and rinsed
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add chicken breasts, white beans, chicken broth, thyme, oregano, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes until chicken is cooked through.
  6. Remove chicken, shred with forks, and return to the pot.
  7. Simmer for 5 more minutes.
  8. Remove bay leaf, stir in parsley, and serve hot.

Notes

  • Blend one cup of soup for a creamier texture if desired.
