White Bean Chicken Soup is a comforting, protein-rich soup made with tender chicken, creamy white beans, vegetables, and herbs in a flavorful broth.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 (15 oz) cans white beans, drained and rinsed
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Add chicken breasts, white beans, chicken broth, thyme, oregano, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until chicken is cooked through.
- Remove chicken, shred with forks, and return to the pot.
- Simmer for 5 more minutes.
- Remove bay leaf, stir in parsley, and serve hot.
Notes
- Blend one cup of soup for a creamier texture if desired.
- Use rotisserie chicken to save time.
- Soup tastes even better the next day.
