Description

A cozy, super simple potato soup made with tender potatoes simmered in a creamy, buttery broth—easy, comforting, and perfect for a quick weeknight meal.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 cup milk
  • 2 tbsp butter
  • 1/2 cup sour cream (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • Chopped green onions or shredded cheese for topping (optional)


Instructions

  1. Add potatoes, onion, and chicken broth to a pot. Bring to a boil.
  2. Reduce heat and simmer for 12–15 minutes or until potatoes are tender.
  3. Use a potato masher to lightly mash the potatoes, leaving some chunks.
  4. Stir in butter, milk, salt, pepper, and garlic powder.
  5. Simmer for an additional 5 minutes until creamy.
  6. Stir in sour cream if desired.
  7. Serve warm with toppings of your choice.
