Description
Crispy-on-the-outside mashed potato nests filled with cheesy or savory fillings—perfect as a fun side dish, appetizer, or brunch favorite.
Ingredients
- 3 cups mashed potatoes (cold works best)
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella or cheddar cheese (for filling)
- Optional fillings: cooked bacon bits, sautéed mushrooms, spinach, or peas
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 400°F (200°C). Grease a muffin tin well.
- In a bowl, mix mashed potatoes, egg, Parmesan, garlic powder, salt, and pepper until well combined.
- Spoon the potato mixture into muffin cups and press firmly up the sides and bottom to form nests.
- Add cheese and optional fillings into the center of each nest.
- Bake for 20–25 minutes, or until edges are golden and crispy.
- Cool for 5 minutes, then carefully remove from the muffin tin.
- Serve warm.
Notes
- Use cold mashed potatoes to help the nests hold their shape.
- Add a cracked egg to the center and bake 5–7 extra minutes for a brunch version.
- Great way to use leftover mashed potatoes.
- Air fry at 375°F (190°C) for 12–15 minutes if preferred.
