Description

Crispy-on-the-outside mashed potato nests filled with cheesy or savory fillings—perfect as a fun side dish, appetizer, or brunch favorite.


Ingredients

  • 3 cups mashed potatoes (cold works best)
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese (for filling)
  • Optional fillings: cooked bacon bits, sautéed mushrooms, spinach, or peas
  • Cooking spray or butter for greasing


Instructions

  1. Preheat oven to 400°F (200°C). Grease a muffin tin well.
  2. In a bowl, mix mashed potatoes, egg, Parmesan, garlic powder, salt, and pepper until well combined.
  3. Spoon the potato mixture into muffin cups and press firmly up the sides and bottom to form nests.
  4. Add cheese and optional fillings into the center of each nest.
  5. Bake for 20–25 minutes, or until edges are golden and crispy.
  6. Cool for 5 minutes, then carefully remove from the muffin tin.
  7. Serve warm.

Notes

  • Use cold mashed potatoes to help the nests hold their shape.
  • Add a cracked egg to the center and bake 5–7 extra minutes for a brunch version.
  • Great way to use leftover mashed potatoes.
  • Air fry at 375°F (190°C) for 12–15 minutes if preferred.
