Description

Street Corn Chicken Casserole is a creamy, cheesy baked dish inspired by Mexican street corn, made with tender chicken, sweet corn, spices, and melted cheese for a comforting family-friendly meal.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup cooked rice
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh cilantro


Instructions

  1. Preheat the oven to 190°C (375°F) and grease a baking dish.
  2. In a large bowl, combine shredded chicken, corn, cooked rice, sour cream, and mayonnaise.
  3. Add chili powder, paprika, garlic powder, salt, and black pepper; mix well.
  4. Stir in half of the cheddar and mozzarella cheese.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. Top with the remaining cheese.
  7. Bake uncovered for 30–35 minutes, until bubbly and golden on top.
  8. Remove from oven, garnish with chopped cilantro, and serve warm.

Notes

  • You can add jalapeños for extra heat.
  • Greek yogurt can be used instead of sour cream.
  • Serve with a squeeze of lime for authentic street corn flavor.
