Street Corn Chicken Casserole is a creamy, cheesy baked dish inspired by Mexican street corn, made with tender chicken, sweet corn, spices, and melted cheese for a comforting family-friendly meal.
Ingredients
- 2 cups cooked chicken breast, shredded
- 2 cups corn kernels (fresh, canned, or frozen)
- 1 cup cooked rice
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat the oven to 190°C (375°F) and grease a baking dish.
- In a large bowl, combine shredded chicken, corn, cooked rice, sour cream, and mayonnaise.
- Add chili powder, paprika, garlic powder, salt, and black pepper; mix well.
- Stir in half of the cheddar and mozzarella cheese.
- Transfer the mixture into the prepared baking dish and spread evenly.
- Top with the remaining cheese.
- Bake uncovered for 30–35 minutes, until bubbly and golden on top.
- Remove from oven, garnish with chopped cilantro, and serve warm.
Notes
- You can add jalapeños for extra heat.
- Greek yogurt can be used instead of sour cream.
- Serve with a squeeze of lime for authentic street corn flavor.
