Description
These Strawberry Cheesecake Cookies combine the creamy texture of cheesecake with the fresh flavor of strawberries, all in a soft and chewy cookie form.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cornstarch
- 1 cup freeze-dried strawberries, crushed
- 1/2 cup white chocolate chips
- 1/2 cup mini chocolate chips (optional, for extra sweetness)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened butter, cream cheese, granulated sugar, and brown sugar until smooth and creamy.
- Add the egg and vanilla extract, and beat until well incorporated.
- In a separate bowl, whisk together the flour, baking soda, salt, and cornstarch.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the crushed freeze-dried strawberries, white chocolate chips, and mini chocolate chips (if using).
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. The cookies may look a little soft in the center, but they will firm up as they cool.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a more intense strawberry flavor, you can blend freeze-dried strawberries into a powder and add it to the dough along with the flour.
- Store in an airtight container for up to 5 days.
- To make these cookies even more decadent, drizzle them with melted white chocolate after baking.
