Ingredients

  • For the Steak Bites:
  • 1 ½ pounds sirloin or ribeye steak, cut into 1-inch cubes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon chili flakes or cayenne
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chopped parsley (for garnish)
  • For the Cheddar Rotini:
  • 10 oz rotini pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika


Instructions

  1. Cook the Rotini: Bring a pot of salted water to a boil and cook rotini according to package directions. Drain and set aside.
  2. Make the Cheddar Sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add milk, whisking until thickened. Stir in cheddar cheese, salt, black pepper, and paprika until creamy. Add cooked rotini and mix to coat.
  3. Prepare the Steak Bites: Season steak cubes with salt, pepper, paprika, and chili flakes.
  4. Heat olive oil in a large skillet over high heat. Add steak bites in a single layer and sear for 2–3 minutes per side until browned. Remove from the skillet.
  5. Reduce heat to medium. Add butter and minced garlic to the skillet; cook for 30 seconds.
  6. Stir in Worcestershire sauce, then return steak bites to the skillet and toss in the garlic butter until fully coated.
  7. Serve steak bites over a bed of cheddar rotini. Garnish with parsley and extra chili flakes if desired.
