A crispy, chewy sourdough skillet pizza baked in a cast-iron pan with a golden crust, melty cheese, and your favorite toppingsโperfect for an easy homemade pizza night.
Ingredients
- 1 1/2 cups active sourdough starter (100% hydration)
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 tbsp olive oil (plus more for skillet)
- 1/2 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup sliced pepperoni or cooked vegetables
- Fresh basil leaves (optional)
Instructions
- In a bowl, mix sourdough starter, flour, salt, and olive oil until a soft dough forms.
- Cover and let the dough rest at room temperature for 4โ6 hours until slightly puffy.
- Preheat oven to 425ยฐF (220ยฐC).
- Generously oil a 10-inch cast-iron skillet.
- Press the dough evenly into the skillet, pushing it slightly up the sides.
- Spread pizza sauce over the dough.
- Top with mozzarella, Parmesan, and desired toppings.
- Bake for 20โ25 minutes until the crust is golden and cheese is bubbly.
- Remove from oven, add fresh basil if using, slice, and serve hot.
Notes
- For a crispier crust, preheat the skillet in the oven before adding dough.
- You can use discard sourdough starter for a milder tang.
- Let pizza rest 5 minutes before slicing for clean cuts.
