Ingredients

  • 1 1/2 cups active sourdough starter (100% hydration)
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp olive oil (plus more for skillet)
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sliced pepperoni or cooked vegetables
  • Fresh basil leaves (optional)

Instructions

  1. In a bowl, mix sourdough starter, flour, salt, and olive oil until a soft dough forms.
  2. Cover and let the dough rest at room temperature for 4โ€“6 hours until slightly puffy.
  3. Preheat oven to 425ยฐF (220ยฐC).
  4. Generously oil a 10-inch cast-iron skillet.
  5. Press the dough evenly into the skillet, pushing it slightly up the sides.
  6. Spread pizza sauce over the dough.
  7. Top with mozzarella, Parmesan, and desired toppings.
  8. Bake for 20โ€“25 minutes until the crust is golden and cheese is bubbly.
  9. Remove from oven, add fresh basil if using, slice, and serve hot.

Notes

  • For a crispier crust, preheat the skillet in the oven before adding dough.
  • You can use discard sourdough starter for a milder tang.
  • Let pizza rest 5 minutes before slicing for clean cuts.
  • Experiment with different cheeses and toppings.
