Ingredients
- 4 boneless skinless chicken breasts or thighs
- 1 cup long-grain white rice, rinsed
- 2 1/2 cups chicken broth
- 2 tbsp olive oil
- 1 lemon (zest and juice)
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced onion
- 1/2 cup carrots or peas (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the slow cooker insert with olive oil.
- Add rinsed rice, chicken broth, garlic, onion, lemon zest, oregano, thyme, paprika, salt, and pepper. Stir to combine.
- Place chicken on top of the rice mixture.
- Drizzle chicken with olive oil and lemon juice.
- Cover and cook on LOW for 4–5 hours, or until chicken is tender and rice is cooked.
- Remove chicken, fluff rice gently, then return chicken to the slow cooker.
- Garnish with fresh parsley and serve warm.
Notes
- Use chicken thighs for juicier results.
- Avoid overcooking to prevent mushy rice.
- Add spinach during the last 15 minutes for extra greens.
- Brown the chicken first for deeper flavor (optional).
