Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 1 cup long-grain white rice, rinsed
  • 2 1/2 cups chicken broth
  • 2 tbsp olive oil
  • 1 lemon (zest and juice)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup diced onion
  • 1/2 cup carrots or peas (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Lightly grease the slow cooker insert with olive oil.
  2. Add rinsed rice, chicken broth, garlic, onion, lemon zest, oregano, thyme, paprika, salt, and pepper. Stir to combine.
  3. Place chicken on top of the rice mixture.
  4. Drizzle chicken with olive oil and lemon juice.
  5. Cover and cook on LOW for 4–5 hours, or until chicken is tender and rice is cooked.
  6. Remove chicken, fluff rice gently, then return chicken to the slow cooker.
  7. Garnish with fresh parsley and serve warm.
