Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1.5 lbs baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Place the beef chunks and halved potatoes into the slow cooker.
  2. In a small saucepan, melt butter over low heat and add minced garlic; cook until fragrant.
  3. Stir in beef broth, onion powder, paprika, thyme, salt, and black pepper.
  4. Pour the garlic butter mixture over the beef and potatoes.
  5. Cover and cook on low for 7โ€“8 hours or on high for 4โ€“5 hours, until beef is tender.
  6. Garnish with fresh parsley before serving.
