Ingredients

  • 1 lb (450g) ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth or water


Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the cooked beef to the slow cooker.
  3. Stir in beans, diced tomatoes, onion, bell pepper, garlic, chili powder, cumin, paprika, cayenne, salt, black pepper, and beef broth.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  5. Stir before serving. Adjust seasoning as needed.
  6. Serve hot with toppings like shredded cheese, sour cream, or chopped green onions.

Notes

  • For a vegetarian version, replace beef with lentils or additional beans.
  • This chili tastes even better the next day as flavors develop overnight.
