Ingredients

  • 1 lb sirloin or flank steak, thinly sliced
  • 2 tbsp olive oil or butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp Worcestershire sauce
  • 3 cups beef broth
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 tbsp cornstarch (optional, for thickening)
  • Fresh parsley, chopped (optional garnish)


Instructions

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Add sliced beef, season with salt, pepper, and paprika, and sear quickly until browned. Remove and set aside.
  3. In the same skillet, add onion and mushrooms. Cook 4–5 minutes until softened.
  4. Add garlic and cook 30 seconds until fragrant.
  5. Stir in Worcestershire sauce and beef broth, scraping up browned bits.
  6. Add egg noodles, stir to submerge, and simmer 8–10 minutes until noodles are tender.
  7. Lower heat and stir in sour cream. Add cornstarch slurry if thicker sauce is desired.
  8. Return beef to skillet and simmer 2–3 minutes until heated through.
  9. Garnish with parsley and serve hot.

  • Do not boil after adding sour cream to prevent curdling.
