Description

Rotel Cream Cheese Sausage Balls are spicy, cheesy, and irresistibly flavorful! These bite-sized appetizers combine spicy sausage, cream cheese, cheddar, and Rotel tomatoes for a creamy, zesty twist on the classic sausage ball — perfect for parties, game days, or snacks.


Ingredients

  • 1 lb spicy pork sausage (or mild, if preferred)
  • 8 oz cream cheese, softened
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, drained well
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 1/2 cups Bisquick or baking mix
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional)
  • 1/4 tsp black pepper


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the sausage, softened cream cheese, drained Rotel, cheddar cheese, Bisquick, garlic powder, paprika, and black pepper.
  3. Mix thoroughly using your hands or a sturdy spoon until all ingredients are evenly incorporated. The mixture will be thick and sticky.
  4. Roll the mixture into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
  5. Bake for 20–25 minutes, or until golden brown and cooked through.
  6. Remove from oven and let cool for 5 minutes before serving.
  7. Serve warm with ranch dressing, chipotle mayo, or extra Rotel on the side for dipping.

Notes

  • Make sure to drain the Rotel well to prevent excess moisture in the dough.
  • You can substitute spicy sausage with mild sausage and add a pinch of cayenne for controlled heat.
  • These freeze beautifully — freeze unbaked sausage balls on a tray, then store in a freezer bag for up to 2 months.
  • Bake frozen sausage balls for 3–5 extra minutes.
