Description
Fluffy and protein-packed Greek yogurt pancakes that make a healthy breakfast option. They are light, tender, and perfect with fresh fruit or a drizzle of honey.
Ingredients
- 1 cup Greek yogurt
- 1/2 cup all-purpose flour (or whole wheat flour)
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
- Butter or oil for cooking
Instructions
- In a mixing bowl, whisk together Greek yogurt, eggs, honey, and vanilla extract until smooth.
- In another bowl, combine flour, baking powder, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook another 1-2 minutes until golden brown.
- Serve warm with fresh fruit, honey, or maple syrup.
Notes
- You can substitute whole wheat flour for extra fiber.
- Add blueberries or chocolate chips to the batter for variety.
- Make smaller pancakes for easier flipping.
