Soft and hearty protein-packed banana oat breakfast squares made with ripe bananas, oats, and protein powder—perfect for meal prep and on-the-go mornings.
Ingredients
- 3 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup vanilla or unflavored protein powder
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1/4 cup milk (dairy or non-dairy)
- 2 tablespoons melted coconut oil or butter
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mash bananas until smooth.
- Whisk in eggs, honey, milk, melted oil, and vanilla.
- Add oats, protein powder, baking powder, cinnamon, and salt; mix until combined.
- Fold in nuts or chocolate chips if using.
- Spread batter evenly into the prepared pan.
- Bake for 25–30 minutes until set in the center.
- Cool completely before slicing into squares.
Notes
- Use very ripe bananas for best sweetness.
- Store in the refrigerator for up to 5 days.
- Can be frozen for meal prep.
