Ingredients
- 1 small wheel (8 oz) brie cheese, chilled
- 1/2 cup shelled pistachios, finely chopped
- 1 large egg, beaten
- 1 sheet puff pastry, thawed
- 2 tbsp honey (plus extra for drizzling)
- 1 tbsp butter, melted
- 1/4 tsp salt
- Fresh thyme leaves (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the chilled brie into small bite-sized cubes (about 1-inch pieces) and freeze for 10 minutes to firm up.
- Roll out the puff pastry and cut into small squares (approximately 2×2 inches).
- Place a piece of brie in the center of each puff pastry square and fold the corners over the cheese to seal tightly.
- Brush each wrapped bite with beaten egg and press the top into the chopped pistachios to create a crust.
- Arrange the bites on the prepared baking sheet and brush lightly with melted butter. Sprinkle with a pinch of salt.
- Bake for 12–15 minutes, or until golden and puffed.
- Remove from the oven and drizzle with honey. Garnish with fresh thyme if desired.
- Serve warm and enjoy the gooey, nutty perfection!
