Pasta Beefaroni is a classic, comforting one-pot meal made with tender macaroni, seasoned ground beef, and a rich tomato sauce. This homemade version of the childhood favorite is hearty, flavorful, and perfect for a quick family dinner.
Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups elbow macaroni (uncooked)
- 2 cups beef broth (or water)
- 1 cup shredded cheddar or mozzarella cheese (optional, for topping)
- 1 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Add chopped onion and garlic to the beef and cook for 2–3 minutes until softened.
- Stir in tomato sauce, diced tomatoes, tomato paste, Italian seasoning, paprika, salt, and black pepper. Mix well.
- Add uncooked macaroni and beef broth to the pot. Stir to combine.
- Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- If desired, stir in shredded cheese until melted and creamy.
- Remove from heat and let stand for a few minutes to thicken.
- Garnish with parsley and serve warm.
Notes
- Use ground turkey or chicken for a lighter version.
- Add a dash of hot sauce or red pepper flakes for extra spice.
- Stir in frozen peas, corn, or diced bell peppers for added veggies.
- Leftovers reheat well — perfect for meal prep.
