Ingredients
- 2 large chicken breasts
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko or regular)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1 egg, beaten
- 2 tbsp olive oil (for frying)
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese (for sauce)
- 1 tsp lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Pound the chicken breasts to an even thickness.
- In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Dip chicken breasts into the beaten egg, then coat with the Parmesan-breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and cook chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add heavy cream and chicken broth, stirring to combine.
- Whisk in Parmesan cheese and lemon juice, simmering until sauce thickens.
- Return chicken to the skillet, spoon sauce over the top, and let simmer for 2–3 minutes.
- Garnish with parsley and serve warm.
Notes
- Serve with pasta, mashed potatoes, or roasted vegetables.
- For a lighter version, substitute half-and-half for heavy cream.
- Ensure chicken reaches an internal temperature of 165°F (74°C).
