Ingredients

  • 1 ½ pounds ground chicken
  • ½ cup breadcrumbs (plain or Italian)
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ½ cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup finely chopped onion
  • ½ cup shredded mozzarella cheese
  • For the Glaze:
  • ½ cup marinara sauce
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, milk, garlic, Italian seasoning, salt, pepper, and onion. Mix until well combined, but do not overmix.
  3. Gently fold in shredded mozzarella cheese.
  4. Shape the mixture into a loaf on the prepared pan or press into a loaf pan.
  5. In a small bowl, mix together marinara sauce, Parmesan, and Italian seasoning. Spread evenly over the top of the meatloaf.
  6. Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 5–10 minutes before slicing. Garnish with extra Parmesan or parsley, if desired.

  • Use lean ground chicken for best results — avoid extra lean to keep it juicy.
  • Add ¼ teaspoon red pepper flakes for a spicy kick.
  • Double the glaze for extra saucy flavor.
