Ingredients
- 1 ½ pounds ground chicken
- ½ cup breadcrumbs (plain or Italian)
- ½ cup grated Parmesan cheese
- 1 large egg
- ½ cup milk
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup finely chopped onion
- ½ cup shredded mozzarella cheese
- For the Glaze:
- ½ cup marinara sauce
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon Italian seasoning
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, milk, garlic, Italian seasoning, salt, pepper, and onion. Mix until well combined, but do not overmix.
- Gently fold in shredded mozzarella cheese.
- Shape the mixture into a loaf on the prepared pan or press into a loaf pan.
- In a small bowl, mix together marinara sauce, Parmesan, and Italian seasoning. Spread evenly over the top of the meatloaf.
- Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for 5–10 minutes before slicing. Garnish with extra Parmesan or parsley, if desired.

- Use lean ground chicken for best results — avoid extra lean to keep it juicy.
- Add ¼ teaspoon red pepper flakes for a spicy kick.
- Double the glaze for extra saucy flavor.
