Description

Fun and comforting mini meatloaf muffins topped with creamy mashed potato frosting, baked in a muffin tin and perfect for family dinners or parties.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 cup ketchup, divided
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 cups mashed potatoes (prepared)
  • 2 tablespoons butter
  • 2 tablespoons milk or cream
  • Optional garnish: chopped parsley or chives


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, 1/4 cup ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  3. Mix gently until just combined.
  4. Divide mixture evenly among muffin cups.
  5. Top each with a small spoonful of remaining ketchup.
  6. Bake for 20โ€“25 minutes until cooked through.
  7. Meanwhile, warm mashed potatoes with butter and milk until smooth.
  8. Transfer mashed potatoes to a piping bag or spoon.
  9. Top each meatloaf muffin with mashed potato frosting.
  10. Garnish if desired and serve warm.
