Ingredients
- 1 pound potato gnocchi (store-bought or homemade)
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken or vegetable broth
- ¾ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 cup spinach or baby kale (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook gnocchi according to package directions until they float to the top (about 2–3 minutes). Drain and set aside.
- In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream and broth, stirring to combine. Bring to a gentle simmer.
- Add Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until the sauce thickens slightly, about 3–4 minutes.
- Season with salt and black pepper to taste.
- Add cooked gnocchi to the skillet and toss to coat evenly in the sauce. Simmer for 2 minutes to let the flavors meld.
- If using spinach or baby kale, stir it in and cook until wilted.
- Garnish with chopped parsley and extra Parmesan before serving.
Notes
- For extra richness, stir in a tablespoon of mascarpone or cream cheese.
- Top with crispy pancetta or bacon bits for added flavor and texture.
