Description

A quick and flavorful Mediterranean-inspired flatbread pizza topped with fresh vegetables, feta cheese, and herbs, perfect for a light meal or appetizer.


Ingredients

  • 2 flatbreads or naan breads
  • 2 tbsp olive oil
  • 1/2 cup hummus
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup baby spinach or arugula
  • 1 tsp dried oregano
  • Salt and black pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush the flatbreads lightly with olive oil and place on a baking sheet.
  3. Spread a thin layer of hummus over each flatbread.
  4. Top with cherry tomatoes, olives, red onion, and feta cheese.
  5. Sprinkle with oregano, salt, and pepper.
  6. Bake for 8–10 minutes, until the flatbreads are crisp and cheese is slightly golden.
  7. Remove from oven and top with cucumber and fresh spinach or arugula.
  8. Slice and serve warm.

Notes

  • You can substitute hummus with a light tomato sauce for variation.
  • Try adding grilled chicken or chickpeas for extra protein.
  • Use gluten-free flatbread if preferred.
