This hearty Meatloaf with Mashed Potatoes and Cheese Layers is a comforting, layered casserole-style dish. Juicy meatloaf is topped with creamy mashed potatoes and melted cheese, creating the ultimate family dinner.

Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups mashed potatoes (prepared)
  • 2 cups shredded cheddar cheese
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Press the meat mixture evenly into the prepared baking dish to form a flat meatloaf layer.
  4. Bake uncovered for 35-40 minutes, until the meatloaf is cooked through.
  5. Carefully spread the prepared mashed potatoes evenly over the meatloaf layer.
  6. Sprinkle shredded cheddar cheese on top of the potatoes.
  7. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  8. Remove from oven and let rest for 5 minutes before slicing. Garnish with parsley if desired.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • For extra flavor, mix some shredded cheese directly into the mashed potatoes.
