Ingredients
- 1 cup all-purpose flour
- 1 tbsp matcha green tea powder
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk (dairy or plant-based)
- 1 large egg
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
Instructions
- In a large mixing bowl, whisk together flour, matcha, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined (do not overmix).
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden on the other side.
- Repeat with remaining batter. Serve warm with maple syrup, whipped cream, or fresh fruit.
