Description

Fluffy and vibrant green matcha pancakes infused with earthy Japanese green tea powder, perfect for a unique and energizing breakfast.

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp matcha green tea powder
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

Instructions

  1. In a large mixing bowl, whisk together flour, matcha, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined (do not overmix).
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden on the other side.
  6. Repeat with remaining batter. Serve warm with maple syrup, whipped cream, or fresh fruit.

Notes

  • For extra fluffiness, let the batter rest for 5 minutes before cooking.
  • Use high-quality ceremonial grade matcha for the best flavor and color.
  • Top with strawberries or red bean paste for a traditional Japanese twist.
