Ingredients
- 4 boneless skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Fresh basil or parsley, for garnish
Instructions
- Season chicken with salt, pepper, and paprika.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear chicken 4–5 minutes per side until browned. Remove and set aside.
- Add minced garlic to the skillet and cook 30 seconds.
- Pour in chicken broth, scraping browned bits from the pan.
- Add heavy cream, sun-dried tomatoes, Parmesan, Italian seasoning, and red pepper flakes. Stir and simmer 2–3 minutes.
- Return chicken to the skillet, spooning sauce over the top.
- Reduce heat and simmer 10–12 minutes until chicken is cooked through and sauce thickens.
- Garnish with fresh basil or parsley and serve.
Notes
- Serve over pasta, rice, or mashed potatoes to soak up the creamy sauce.
- Use sun-dried tomatoes packed in oil for best flavor.
- Add spinach during the last few minutes for extra veggies.
- Thighs stay juicier than breasts if slow-simmered.
