Ingredients
- 1 box (15.25 oz) yellow cake mix
- 1/2 cup unsalted butter, melted
- 3 large eggs, divided
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup lemon juice (fresh or bottled)
- 1 tbsp lemon zest
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix until crumbly and press evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust for 10 minutes, then remove from the oven and set aside.
- In another bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and remaining 2 eggs until smooth and creamy.
- Pour the lemon mixture over the partially baked crust and spread evenly.
- Bake for an additional 20–25 minutes, or until the edges are lightly golden and the center is set.
- Cool completely, then refrigerate for at least 1 hour before cutting into bars.
- Dust with powdered sugar before serving, if desired.
Notes
- For a stronger lemon flavor, add extra zest or a few drops of lemon extract.
- Store leftovers in the refrigerator for up to 5 days.
- These bars taste even better chilled overnight.
