Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 3 large eggs, divided
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup lemon juice (fresh or bottled)
  • 1 tbsp lemon zest
  • Powdered sugar, for dusting (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix until crumbly and press evenly into the bottom of the prepared baking dish to form the crust.
  3. Bake the crust for 10 minutes, then remove from the oven and set aside.
  4. In another bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and remaining 2 eggs until smooth and creamy.
  5. Pour the lemon mixture over the partially baked crust and spread evenly.
  6. Bake for an additional 20–25 minutes, or until the edges are lightly golden and the center is set.
  7. Cool completely, then refrigerate for at least 1 hour before cutting into bars.
  8. Dust with powdered sugar before serving, if desired.
