Description

Hearty Instant Pot chili loaded with ground beef, beans, tomatoes, and warm spices for a fast, comforting one-pot meal.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 1/2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Set the Instant Pot to Sautรฉ mode and add olive oil.
  2. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  3. Add onion, bell pepper, and garlic; sautรฉ for 2โ€“3 minutes until fragrant.
  4. Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
  5. Add tomato paste, diced tomatoes, beans, and beef broth. Stir well to combine.
  6. Cancel Sautรฉ mode and secure the lid. Set valve to Sealing.
  7. Cook on High Pressure for 15 minutes.
  8. Allow natural pressure release for 10 minutes, then carefully quick release remaining pressure.
  9. Stir chili and adjust seasoning if needed before serving.

Notes

  • For thicker chili, simmer on Sautรฉ mode for a few minutes after pressure cooking.
  • Swap ground beef with ground turkey for a lighter version.
  • Serve with shredded cheese, sour cream, or chopped green onions.
