Description

Homemade KFC Chicken in the Oven is a crispy, flavorful oven-baked version of the classic fried chicken, coated in a seasoned crust and baked to golden perfection without deep frying.


Ingredients

  • 8 pieces chicken (drumsticks, thighs, or breasts)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/4 cup melted butter or vegetable oil (for brushing)


Instructions

  1. In a large bowl, soak chicken pieces in buttermilk for at least 2 hours or overnight in the refrigerator.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Lightly grease the rack.
  3. In a bowl, mix flour with all spices until well combined.
  4. Remove chicken from buttermilk, allowing excess to drip off, then dredge each piece thoroughly in the seasoned flour.
  5. Place coated chicken on the prepared wire rack.
  6. Brush or lightly drizzle melted butter or oil over the chicken to help it crisp.
  7. Bake for 40–45 minutes, turning once halfway through, until chicken is golden brown and cooked through.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Using a wire rack allows heat to circulate for crispier chicken.
  • Marinating overnight gives the best flavor and tenderness.
  • Serve with coleslaw, mashed potatoes, or corn on the cob.
