Hobo Casserole is a hearty, budget-friendly comfort food classic made with ground beef, potatoes, onions, and a creamy sauce baked to perfection. It’s a simple, no-fuss meal that brings all the cozy flavors of a home-cooked dinner to your table.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 34 medium russet potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil or butter (for greasing)
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or butter.
  2. In a skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and the onion is softened. Drain excess grease.
  3. Stir in Worcestershire sauce, garlic powder, salt, and pepper. Set aside.
  4. In a small bowl, whisk together the cream of mushroom soup and milk until smooth.
  5. Layer half of the sliced potatoes at the bottom of the baking dish. Spread half of the beef mixture on top, then pour half of the soup mixture over it.
  6. Repeat the layers with the remaining potatoes, beef, and soup mixture.
  7. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  8. Remove the foil, sprinkle shredded cheddar cheese evenly on top, and bake uncovered for an additional 15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
