Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup plain Greek yogurt (nonfat or low-fat)
  • 1 medium cucumber, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill or parsley, chopped
  • Salt and black pepper to taste
  • Optional: 1/2 tsp dried oregano


Instructions

  1. In a large mixing bowl, combine the Greek yogurt, lemon juice, olive oil, garlic, dill, salt, and pepper. Mix well to create the tzatziki dressing.
  2. Add the chicken, cucumber, tomatoes, red onion, and feta cheese to the bowl.
  3. Toss everything together until evenly coated in the dressing.
  4. Adjust seasoning with more lemon juice, salt, or pepper if desired.
  5. Chill for at least 30 minutes before serving to let the flavors meld.
  6. Serve on a bed of lettuce, inside a whole-grain pita, or enjoy it on its own.
