Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 1 cup plain Greek yogurt (nonfat or low-fat)
- 1 medium cucumber, finely diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh dill or parsley, chopped
- Salt and black pepper to taste
- Optional: 1/2 tsp dried oregano
Instructions
- In a large mixing bowl, combine the Greek yogurt, lemon juice, olive oil, garlic, dill, salt, and pepper. Mix well to create the tzatziki dressing.
- Add the chicken, cucumber, tomatoes, red onion, and feta cheese to the bowl.
- Toss everything together until evenly coated in the dressing.
- Adjust seasoning with more lemon juice, salt, or pepper if desired.
- Chill for at least 30 minutes before serving to let the flavors meld.
- Serve on a bed of lettuce, inside a whole-grain pita, or enjoy it on its own.
Notes
- Use leftover rotisserie chicken for convenience.
- For a dairy-free version, use dairy-free yogurt and omit feta.
