Ingredients
- 3 ripe bananas, mashed
- 2 cups rolled oats (blended into flour)
- 1 cup fresh or frozen blueberries
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven to 180ยฐC (350ยฐF) and line a loaf pan with parchment paper.
- Blend rolled oats in a blender or food processor until they form a fine flour.
- In a bowl, mash the bananas until smooth.
- Add oat flour, baking powder, and cinnamon to the bananas and mix until well combined.
- Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40โ45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing.
Notes
- Overripe bananas provide all the natural sweetness.
- Frozen blueberries should be folded in straight from the freezer.
