Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup chicken broth
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the crockpot with nonstick spray or a bit of olive oil.
- Place the halved baby potatoes at the bottom of the crockpot. Drizzle with 1 tablespoon olive oil and sprinkle with half of the salt, pepper, and paprika.
- Lay the chicken breasts over the potatoes. Season the chicken with remaining salt, pepper, paprika, and Italian seasoning.
- In a small bowl, whisk together the heavy cream, chicken broth, minced garlic, and Parmesan cheese.
- Pour the garlic Parmesan mixture evenly over the chicken and potatoes.
- Cover and cook on LOW for 5–6 hours or on HIGH for 2.5–3 hours, until the chicken is tender and fully cooked and the potatoes are soft.
- Before serving, stir everything gently to coat the chicken and potatoes in the sauce.
- Garnish with fresh parsley and extra Parmesan if desired. Serve warm.
