Description

Tender seared steak bites and crispy golden potatoes tossed in a rich garlic butter sauce for a quick, hearty, and flavor-packed meal.


Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried parsley (plus extra for garnish)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add the halved potatoes, season with salt and pepper, and cook for 12–15 minutes until crispy and tender. Remove from skillet and set aside.
  3. Season the steak bites with salt, pepper, paprika, and thyme.
  4. Add the remaining olive oil to the skillet and heat until shimmering. Add the steak bites in a single layer, searing for 2–3 minutes per side until browned. Remove and set aside.
  5. Lower heat to medium and add the butter to the skillet.
  6. Stir in the garlic and cook until fragrant, about 30 seconds.
  7. Return potatoes and steak bites to the skillet, tossing to coat in the garlic butter sauce.
  8. Sprinkle with dried parsley, garnish with fresh parsley if desired, and serve warm.

Notes

  • For extra flavor, add a splash of Worcestershire sauce to the garlic butter.
  • Use ribeye for a more tender result.
  • Ensure the skillet is hot before adding steak to achieve a good sear.
