Description
The Best Fudgy Chewy Brookies (Brownie + Cookie Bars) combine the rich, gooey texture of fudgy brownies with the chewy, buttery goodness of chocolate chip cookies. These indulgent layered bars are the ultimate dessert mashup — crisp edges, soft centers, and loaded with chocolate in every bite.
Ingredients
- For the Brownie Layer:
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- ⅓ cup unsweetened cocoa powder
- ¼ teaspoon salt
- ½ cup semisweet chocolate chips
- For the Cookie Layer:
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Make the brownie layer: In a large bowl, whisk together melted butter, sugar, eggs, and vanilla until smooth and glossy. Stir in flour, cocoa powder, and salt until just combined. Fold in chocolate chips. Spread evenly into the prepared pan.
- Make the cookie layer: In another bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg and vanilla. Add flour, baking soda, and salt, and mix until just combined. Fold in chocolate chips.
- Drop spoonfuls of cookie dough over the brownie batter and gently spread to cover as much surface as possible (it doesn’t need to be perfect — they’ll bake together beautifully).
- Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
- Cool completely in the pan before cutting into squares for clean edges.
Notes
- For extra fudginess, slightly underbake and chill before slicing.
- Add sea salt on top before baking for a gourmet touch.
- Use dark chocolate chips for richer flavor or white/milk chocolate for variety.
- Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months.
