Description
Light, airy, and perfectly golden pancakes that are easy to make and ideal for breakfast or brunch.
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
- Pour wet ingredients into dry ingredients and stir gently until just combined (batter should be slightly lumpy).
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup batter onto skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes.
- Flip and cook another 1–2 minutes until golden and cooked through.
- Serve warm with butter, syrup, or desired toppings.
Notes
- Do not overmix the batter to keep pancakes fluffy.
- For extra fluffiness, let the batter rest for 5–10 minutes before cooking.
- You can add blueberries, chocolate chips, or bananas for variety.
