Description

A soft and fluffy cottage cheese flatbread that is high in protein and incredibly easy to make. Perfect as a wrap, pizza base, or served alongside your favorite dips.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp olive oil (plus more for cooking)
  • 1 tsp garlic powder (optional)
  • 1 tbsp chopped fresh herbs (optional)


Instructions

  1. In a blender or food processor, blend cottage cheese and eggs until smooth.
  2. Transfer mixture to a bowl and stir in flour, baking powder, salt, olive oil, and optional seasonings until a soft dough forms.
  3. Lightly flour a surface and divide dough into 4 equal portions.
  4. Roll each portion into a thin round flatbread.
  5. Heat a lightly oiled skillet over medium heat.
  6. Cook each flatbread for 2-3 minutes per side until golden brown and cooked through.
  7. Serve warm as a wrap, sandwich base, or with dips.

Notes

  • For gluten free version, substitute with gluten free all-purpose flour blend.
  • Do not roll too thin to maintain fluffiness.
