Description
A soft and fluffy cottage cheese flatbread that is high in protein and incredibly easy to make. Perfect as a wrap, pizza base, or served alongside your favorite dips.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp olive oil (plus more for cooking)
- 1 tsp garlic powder (optional)
- 1 tbsp chopped fresh herbs (optional)
Instructions
- In a blender or food processor, blend cottage cheese and eggs until smooth.
- Transfer mixture to a bowl and stir in flour, baking powder, salt, olive oil, and optional seasonings until a soft dough forms.
- Lightly flour a surface and divide dough into 4 equal portions.
- Roll each portion into a thin round flatbread.
- Heat a lightly oiled skillet over medium heat.
- Cook each flatbread for 2-3 minutes per side until golden brown and cooked through.
- Serve warm as a wrap, sandwich base, or with dips.
Notes
- For gluten free version, substitute with gluten free all-purpose flour blend.
- Do not roll too thin to maintain fluffiness.
- Store in an airtight container for up to 3 days.
- Reheat in a skillet for best texture.
