Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup milk
- 1 cup shredded sweetened coconut
- 1 cup self-rising flour
Instructions
- Preheat the oven to 180ยฐC (350ยฐF). Grease and flour a loaf pan or round cake pan.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Gradually mix in the milk until well combined.
- Fold in the shredded coconut.
- Add the self-rising flour and mix just until smooth.
- Pour the batter into the prepared pan.
- Bake for 45โ50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool before slicing and serving.
Notes
- Do not overmix once the flour is added.
- Can be served plain or topped with powdered sugar or glaze.
