Description

A simple and flavorful one-pan meal featuring tender chicken baked with creamy tzatziki sauce and fluffy rice, infused with Mediterranean herbs and spices.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly in the baking dish and pour in chicken broth.
  3. In a small bowl, mix tzatziki sauce, olive oil, oregano, garlic powder, paprika, salt, and pepper.
  4. Place chicken on top of rice and spread the tzatziki mixture evenly over the chicken.
  5. Cover the dish tightly with foil and bake for 40–45 minutes.
  6. Remove foil and sprinkle with feta cheese. Bake uncovered for an additional 10–15 minutes, until chicken is cooked through and rice is tender.
  7. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Use boneless chicken thighs for extra tenderness and flavor.
  • If rice is not fully cooked, add 1/4 cup broth and bake an additional 10 minutes.
