Description
A simple and flavorful one-pan meal featuring tender chicken baked with creamy tzatziki sauce and fluffy rice, infused with Mediterranean herbs and spices.
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts or thighs
- 1 1/2 cups long-grain white rice, uncooked
- 3 cups chicken broth
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Spread uncooked rice evenly in the baking dish and pour in chicken broth.
- In a small bowl, mix tzatziki sauce, olive oil, oregano, garlic powder, paprika, salt, and pepper.
- Place chicken on top of rice and spread the tzatziki mixture evenly over the chicken.
- Cover the dish tightly with foil and bake for 40–45 minutes.
- Remove foil and sprinkle with feta cheese. Bake uncovered for an additional 10–15 minutes, until chicken is cooked through and rice is tender.
- Garnish with fresh parsley and serve with lemon wedges.
Notes
- Use boneless chicken thighs for extra tenderness and flavor.
- If rice is not fully cooked, add 1/4 cup broth and bake an additional 10 minutes.
- Pairs well with a side Greek salad or roasted vegetables.
