Ingredients
- 3 cups frozen shredded hashbrowns, thawed and squeezed dry
- 1/2 lb breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Cooking spray or melted butter for greasing
Instructions
- Preheat oven to 400°F (200°C). Grease a mini muffin tin.
- In a large bowl, combine hashbrowns, cooked sausage, cheddar cheese, Parmesan, egg, garlic powder, onion powder, and black pepper.
- Mix until evenly combined.
- Scoop the mixture into the prepared muffin cups, pressing down slightly.
- Bake for 22–26 minutes, or until edges are golden and crispy.
- Cool for 5 minutes, then remove from the pan and serve warm.
Notes
- Be sure to squeeze excess moisture from hashbrowns for crispier bites.
- Swap cheddar for pepper jack for a spicy version.
- Air fry at 375°F (190°C) for 12–15 minutes if preferred.
- Serve with ketchup, hot sauce, or sour cream.
