Description

A wholesome and protein-packed cottage cheese and veggie bake, perfect as a healthy main or side dish. It combines fresh vegetables with creamy cottage cheese, baked to golden perfection.


Ingredients

  • 2 cups cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet, heat olive oil and sauté onion, garlic, zucchini, and bell pepper until softened.
  3. Stir in spinach and cook for 1–2 minutes until wilted. Remove from heat.
  4. In a large mixing bowl, whisk together eggs, milk, salt, pepper, oregano, and paprika.
  5. Add cottage cheese and half of the shredded cheddar, stirring to combine.
  6. Mix in the cooked vegetables and transfer the mixture into the prepared baking dish.
  7. Top with remaining shredded cheddar cheese.
  8. Bake uncovered for 35–40 minutes, or until the top is golden and the center is set.
  9. Allow to cool for 10 minutes before slicing and serving.

Notes

  • You can substitute or add other vegetables like broccoli, mushrooms, or carrots.
  • For extra flavor, sprinkle with fresh herbs before serving.
