Description
A wholesome and protein-packed cottage cheese and veggie bake, perfect as a healthy main or side dish. It combines fresh vegetables with creamy cottage cheese, baked to golden perfection.
Ingredients
- 2 cups cottage cheese
- 1 cup shredded cheddar cheese
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
- In a skillet, heat olive oil and sauté onion, garlic, zucchini, and bell pepper until softened.
- Stir in spinach and cook for 1–2 minutes until wilted. Remove from heat.
- In a large mixing bowl, whisk together eggs, milk, salt, pepper, oregano, and paprika.
- Add cottage cheese and half of the shredded cheddar, stirring to combine.
- Mix in the cooked vegetables and transfer the mixture into the prepared baking dish.
- Top with remaining shredded cheddar cheese.
- Bake uncovered for 35–40 minutes, or until the top is golden and the center is set.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- You can substitute or add other vegetables like broccoli, mushrooms, or carrots.
- For extra flavor, sprinkle with fresh herbs before serving.
- This dish can be prepared ahead and reheated for quick meals.
