Ingredients
- 2 ¾ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- ¼ cup brown sugar (for filling)
- 1 tablespoon ground cinnamon (for filling)
- 2 tablespoons melted butter (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- ½ teaspoon vanilla extract (for glaze)
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream butter and granulated sugar together until light and fluffy, about 2–3 minutes.
- Add egg and vanilla extract, and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Roll out the dough on a floured surface into a rectangle about ¼ inch thick.
- Brush the melted butter evenly over the dough, then sprinkle with brown sugar and cinnamon.
- Roll the dough tightly into a log. Wrap in plastic wrap and chill for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Slice chilled dough into ¼-inch thick rounds and place them 2 inches apart on the baking sheet.
- Bake for 10–12 minutes, or until the edges are lightly golden. Let cool completely on a wire rack.
- For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies and let set before serving.
