Ingredients

  • 2 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ¼ cup brown sugar (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 2 tablespoons melted butter (for filling)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)


Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream butter and granulated sugar together until light and fluffy, about 2–3 minutes.
  3. Add egg and vanilla extract, and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  5. Roll out the dough on a floured surface into a rectangle about ¼ inch thick.
  6. Brush the melted butter evenly over the dough, then sprinkle with brown sugar and cinnamon.
  7. Roll the dough tightly into a log. Wrap in plastic wrap and chill for at least 1 hour.
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Slice chilled dough into ¼-inch thick rounds and place them 2 inches apart on the baking sheet.
  10. Bake for 10–12 minutes, or until the edges are lightly golden. Let cool completely on a wire rack.
  11. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies and let set before serving.
