Ingredients

  • 3 3/4 cups granulated sugar
  • 1 1/2 cups light corn syrup
  • 1 cup water
  • 1 teaspoon cinnamon oil
  • 1/2 teaspoon red food coloring
  • Powdered sugar (for dusting)


Instructions

  1. Prepare a large baking sheet by lining it with foil and lightly dusting it with powdered sugar.
  2. In a large heavy saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
  3. Attach a candy thermometer to the pan and continue cooking without stirring until the temperature reaches 300°F (hard crack stage).
  4. Remove from heat and quickly stir in cinnamon oil and red food coloring. Be careful — the vapor can be strong.
  5. Immediately pour the hot mixture onto the prepared baking sheet. Do not spread; it will naturally settle.
  6. Allow the candy to cool completely, then break into small pieces using a mallet or the handle of a wooden spoon.
  7. Dust pieces lightly with powdered sugar to prevent sticking. Store in an airtight container.
