Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 ½ cups milk (whole or 2%)
- 12 oz uncooked spaghetti (broken in half)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons butter
- ¼ teaspoon crushed red pepper flakes (optional)
- 2 tablespoons chopped parsley (for garnish)
Instructions
- In a large deep skillet or pot, heat olive oil over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
- In the same pot, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and milk, then bring to a gentle boil.
- Add uncooked spaghetti to the pot, stirring frequently to prevent sticking. Reduce heat to medium-low and simmer for 10–12 minutes, or until the pasta is cooked and most of the liquid has been absorbed.
- Stir in butter, mozzarella, and Parmesan cheese until melted and creamy. Add the cooked chicken back into the pot and toss to coat evenly.
- Taste and adjust seasoning, adding crushed red pepper flakes if desired.
- Garnish with chopped parsley and extra Parmesan before serving warm.
