Description

Chicken Cheese One Pot Spaghetti is a quick, creamy, and cheesy pasta dish loaded with tender chicken, melty cheese, and flavorful herbs — all cooked together in one pot for minimal cleanup and maximum flavor. It’s a family-friendly comfort meal that’s ready in under 30 minutes.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 ½ cups milk (whole or 2%)
  • 12 oz uncooked spaghetti (broken in half)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped parsley (for garnish)


Instructions

  1. In a large deep skillet or pot, heat olive oil over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
  2. In the same pot, add minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in chicken broth and milk, then bring to a gentle boil.
  4. Add uncooked spaghetti to the pot, stirring frequently to prevent sticking. Reduce heat to medium-low and simmer for 10–12 minutes, or until the pasta is cooked and most of the liquid has been absorbed.
  5. Stir in butter, mozzarella, and Parmesan cheese until melted and creamy. Add the cooked chicken back into the pot and toss to coat evenly.
  6. Taste and adjust seasoning, adding crushed red pepper flakes if desired.
  7. Garnish with chopped parsley and extra Parmesan before serving warm.

  • Use rotisserie chicken for a faster prep option.
  • For extra creaminess, add 2 oz of cream cheese before mixing in the shredded cheese.
