Ingredients
- 4 large potatoes, diced (about 800 g)
- 2 tablespoons olive oil
- 1 packet (30 g) taco seasoning
- 1 cup shredded cheddar cheese (120 g)
- 1 cup shredded mozzarella cheese (120 g)
- 1/2 cup sour cream (120 g)
- 2 tablespoons chopped green onions
- Salt to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Wash and dice the potatoes into bite-sized pieces.
- Toss the potatoes with olive oil, taco seasoning, and a pinch of salt.
- Spread the potatoes evenly on a baking tray lined with parchment paper.
- Roast in the oven for 35–40 minutes, flipping halfway, until golden and tender.
- Remove from the oven and sprinkle cheddar and mozzarella cheese evenly over the potatoes.
- Return to the oven for 5–7 minutes, or until the cheese is fully melted.
- Remove from the oven and drizzle with sour cream.
- Garnish with chopped green onions and serve warm.
Notes
- You can add cooked ground beef or chicken for extra protein.
- Adjust the spice level by using mild or hot taco seasoning.
- Serve with salsa or guacamole for added flavor.
