Description

Crispy golden potato pancakes with gooey melted cheese inside, perfect as a savory snack, side dish, or appetizer.


Ingredients

  • 3 large potatoes, peeled and grated
  • 1 small onion, grated
  • 1 large egg
  • 2 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 2 tbsp fresh parsley, chopped (optional)
  • 3 tbsp vegetable oil (for frying)


Instructions

  1. Grate potatoes and onion, then squeeze out excess liquid using a clean kitchen towel.
  2. In a bowl, mix potatoes, onion, egg, flour, salt, and pepper until well combined.
  3. Stir in shredded cheese and parsley (if using).
  4. Heat oil in a skillet over medium-high heat.
  5. Scoop about 2 tablespoons of mixture, flatten into a patty, and place in the skillet.
  6. Fry 2–3 minutes per side until golden brown and crispy.
  7. Remove and drain on paper towels before serving.
