Description
Crispy golden potato pancakes with gooey melted cheese inside, perfect as a savory snack, side dish, or appetizer.
Ingredients
- 3 large potatoes, peeled and grated
- 1 small onion, grated
- 1 large egg
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar or mozzarella cheese
- 2 tbsp fresh parsley, chopped (optional)
- 3 tbsp vegetable oil (for frying)
Instructions
- Grate potatoes and onion, then squeeze out excess liquid using a clean kitchen towel.
- In a bowl, mix potatoes, onion, egg, flour, salt, and pepper until well combined.
- Stir in shredded cheese and parsley (if using).
- Heat oil in a skillet over medium-high heat.
- Scoop about 2 tablespoons of mixture, flatten into a patty, and place in the skillet.
- Fry 2–3 minutes per side until golden brown and crispy.
- Remove and drain on paper towels before serving.
Notes
- Use well-drained potatoes to avoid soggy pancakes.
- Try different cheeses like mozzarella for stretchiness or gouda for a richer taste.
- Serve with sour cream, garlic dip, or ketchup for dipping.
