Ingredients

  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup diced celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups chicken broth
  • 4 cups peeled and diced potatoes
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add onion, carrots, and celery; cook until vegetables are tender.
  3. Stir in basil and parsley.
  4. Add chicken broth and potatoes; bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. In a small bowl, whisk flour and milk until smooth. Slowly stir into the soup.
  6. Simmer until soup thickens, stirring frequently.
  7. Reduce heat and add shredded cheese, stirring until melted.
  8. Stir in sour cream, salt, and pepper.
  9. Serve hot.
