Ingredients
- 1 lb ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 cups chicken broth
- 4 cups peeled and diced potatoes
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup sour cream
- Salt, to taste
- Black pepper, to taste
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add onion, carrots, and celery; cook until vegetables are tender.
- Stir in basil and parsley.
- Add chicken broth and potatoes; bring to a boil, then reduce heat and simmer until potatoes are tender.
- In a small bowl, whisk flour and milk until smooth. Slowly stir into the soup.
- Simmer until soup thickens, stirring frequently.
- Reduce heat and add shredded cheese, stirring until melted.
- Stir in sour cream, salt, and pepper.
- Serve hot.
Notes
- Use ground turkey for a lighter version.
- Do not boil after adding cheese to prevent curdling.
- Garnish with crumbled bacon or green onions if desired.
