Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1 cup finely grated apple (peeled)
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch or 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, whisk granulated sugar, brown sugar, eggs, oil, applesauce, and vanilla until smooth.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Fold in grated carrots, grated apple, and nuts if using.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool completely before slicing or frosting if desired.
