Description

Buffalo Chicken Bacon Loaded Mozzarella Bombs are the ultimate party appetizer — crispy on the outside, gooey and spicy on the inside. Each bite is packed with shredded buffalo chicken, melted mozzarella, and smoky bacon wrapped in golden biscuit dough for a bold, cheesy explosion of flavor.


Ingredients

  • For the Filling:
  • 2 cups cooked shredded chicken
  • ½ cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked crumbled bacon
  • 2 tablespoons chopped green onions (optional)
  • For the Dough:
  • 1 can (16 oz) refrigerated biscuit dough (8 biscuits)
  • 4 oz mozzarella cheese, cut into 8 cubes
  • For Brushing:
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley flakes


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix shredded chicken, buffalo sauce, cream cheese, shredded mozzarella, bacon, and green onions until well combined.
  3. Separate biscuit dough pieces and flatten each into a small circle about 3–4 inches wide.
  4. Place 1 tablespoon of the buffalo chicken mixture and 1 cube of mozzarella cheese in the center of each dough circle.
  5. Fold the edges of the dough over the filling, pinching to seal tightly. Roll into a smooth ball.
  6. Place the sealed side down on the prepared baking sheet.
  7. In a small bowl, mix melted butter, garlic powder, and parsley. Brush over each dough ball.
  8. Bake for 15–18 minutes, or until golden brown and cooked through.
  9. Let cool for a few minutes before serving. Serve warm with ranch or blue cheese dressing for dipping.

Notes

  • For extra spice, add a few dashes of hot sauce to the filling.
  • Use canned pizza dough or crescent roll dough if biscuit dough isn’t available.
  • These bombs can be air-fried at 350°F (175°C) for 10–12 minutes for a crispier texture.
  • Best served fresh, but leftovers can be reheated in the oven to maintain crispiness.
